In my last trip to the grocery store I grabbed a couple of Jerusalem artichokes, inspired by someone who was getting them and said, they are good. To tell you the truth their appearance didn??t appeal to me that much but, I thought, okay, let??s give them a try. Sort of a random experiment since I have limited experience with duck and am just looking for an excuse to cook with sunchokes. Found some Bell & Evans duck breasts at whole foods that looked good and low maintenance.
