Satisfies Your Sweet Tooth And Feeds Thyroid

In my last trip to the grocery store I grabbed a couple of Jerusalem artichokes, inspired by someone who was getting them and said, they are good. To tell you the truth their appearance didn??t appeal to me that much but, I thought, okay, let??s give them a try. Well, I made a salad and added a small one, peeled and cut in chuncks, and I liked it. It added a sweet and nutty touch to it. Jerusalem artichoke also can be a great snack ya know.. Especially if you crave for something sweet a

Pan Roasted Duck Breast w/ Spicy Sunchoke Soup

Sort of a random experiment since I have limited experience with duck and am just looking for an excuse to cook with sunchokes. Found some Bell & Evans duck breasts at whole foods that looked good and low maintenance. For the duck, just started the breasts skin side down in a hot pan until the fat rendered and the skin crisped up. Then, duck into the oven at 250 for 30 minutes until an internal temperature of 165 is achieved. I added some thyme to the oven about 10 minutes in. For the sunc

Recipe of the Week: The Pilgrim's Soup

Here's a delicious soup Don created last spring, using Jerusalem artichokes.* "How come I haven't shared the recipe yet" you ask? Good question! My original intention was to include it in my "Best Of The Sunny Raw Kitchen" ebook, except artichokes vanished from the shelves on my local health food store before I was able to take a picture of the soup. Then I guess I got caught in the constant whirlwind of exciting new raw creations and forgot all about it... Anyhow, we've had the chance to make

I had purple sunchokes and half a chicken, and I was feeling ambitious. Roasting the ingredients whole was one consideration ?? sunchokes become hot and luscious done this way, or so it??s said. Then I spotted Mark Bittman??s sunchoke saute and decided to fold it into a one-pan meal that started on the stove and finished in a hot oven, adding celery root and apple for interest, and because we had them on hand. Hey, Hey CSA - Week 3: Sunchoke Latkes with Beet Pesto

Time for a delicious lesson in folk etymology. Jerusalem artichokes are neither from Jerusalem, nor artichokes. Discuss. These odd-shaped edible tubers also have an oddly slap-dashed Anglicized name, sunchokes. "Sun" becuase the actual plant is in the sunflower family, and it resembles its bigger relatives. "Chokes" - well, is a bit of a stretch. Sunchokes are one of the few native tubers to North America and when they were introduced to Europe, they came to take on the Italian word for sunflowe

A nice nap and some large quantities of Advil later, I feel so much better. In this mood, I can share the silly and fun parts of the day. Sunchoke Seafood Soup

I'm a big fan of leek and potato soup. It always seems like a miracle to me that such simple ingredients - leeks, potatoes, water, salt - can make such a heavenly soup. So, when I saw a recipe recently that seemed like a riff on that, but more complex and interesting, I wanted to try it. This recipe, a variation on the one La Tartine Gourmande posted a while back, called for Jerusalem artichokes, potato, fennel, shallots, rosemary, celery and water to make the soup base. Jerusalem Artichoke! Cranky??s comment, with info from Wikipedia, is too good not to include here: Despite its name, the Jerusalem artichoke has no relation to Jerusalem, and it is not a type of artichoke, though they are in the same family. Sunchokes, or Jerusalem artichokes, are one of my favourite little tubers. I know they have been done to death, but I just love the way they taste and I picked some up at the Farmer's Market. Last night, I was not feeling the cooking vibe, but I did it anyway, preparing garlicky lamb chops with a red wine sauce, green beans and a sunchoke and yam gratin.
